When I see numbers my brain runs far away, so can anyone tell me exactly how much dry yeast I need for 3oz fresh? There are so many different answers here I am going crazy!

Found this for you:
Substitutions: 1 (1/4 oz) package dry active yeast = 2 1/4 teaspoons = 1 (1 oz) cake compressed fresh yeast
So 3 oz fresh = 3 pkg dry (or 3/4 oz) = 6 3/4 teaspoons (which is 2 tablespoons and 3/4 teaspoon)
