I do potato kugel w/o cupcake holders. I just spray the muffin tin and then turn them out.

carrot muffins work very well as does apple kugel. I also have a recipe for challah kugel (not sweet) that works great in muffins. Let me know if you want any recipes.

Mini Hush Puppies (Chanie Edelstein-Binah)
8 frankfurters, cut into thirds
2 large onions chopped
8 potatoes
1/3 cup oil
4 eggs
2 cups flour
1 T salt
1/2 tsp. pepper
Glaze: 1 egg beaten
sesame seeds
Directions:
Boil potatoes. Drain water from pot & mash potatoes.
Saute onions in oil until onions turn golden. Add sauteed onions to mashed potatoes and let cool. Add eggs, flour, salt & pepper and mix together.
Preheat oven to 350 line 2 12-cup muffin tins with cupcake holders.
Place 1/3 of a frankfurter in each cupcake holder. Using an ice cream scoop place one scoop of potato mixture on top of the frankfurter. Repeat until all holders are full.
Using a pastry brush, paint beaten egg on top of each potato puff. Sprinkle with sesame seeds and bake for 40 minutes.
Tip: these hush puppies can be prepared in advance adn frozen raw. YOu can pop them in the oven frozen; just add 10 minutes to the cooking time.

Here is the challah kugel (or called stuffing kugel):

1 Challah
2 Onions
2 Boxes of Mushrooms
1 Bag of Celery (optional)
Oil
Salt, Pepper to taste
1 Tablespoon Onion Soup Mix
Servings (Servings) recalculate

Preparation
Cut the crust off the challah. Soak it in water and then squeeze it out. Set aside. Saute onions, celery and mushrooms in a liberal amount of oil. Mix this mixture with the challah. Add the onion soup mix, salt and pepper. Bake at 350F for about 1 hour and 20 minutes.

Helpful Hints
Try making these in individual muffin tins (then you would have to reduce the baking time).

1/2 cup dark brown sugar
1/2 cup white sugar
1 1/2 tsp. baking powder
1/2 cup of oil or apple sauce
1 tsp. vanilla
4 eggs

Preparation
mix altogether and bake for 45 min at 350F.

3 Large Eggs
1/2 cup/s Canola Or Vegetable Oil
1 cup/s Sugar
1 teaspoon/s Cinnamon
1 teaspoon/s Almond Extract
1 cup/s Flour
1/2 teaspoon/s Baking Powder
2 Medium Red Apples Peeled And Chopped Into Small Pieces
1/2 cup/s Chopped Walnuts Or Pecans

Preparation
Preheat oven to 350. Grease 12 muffin tins with nonstick cooking spray. In a large bowl, mix the eggs, oil, sugar, cinnamon, almond extract, flour, and baking powder at medium speed, beat until the batter is smooth.
Place a small mound of apples into each prepared muffin tin. Spoon batter into each tin to cover the apples. Sprinkle with cinnamon and add nuts, if desired. Bake 20-30 minutes or until toothpick comes out clean

I make doughless potato knishes in muffin tins. Heaven and much nicer than cutting pieces from a pan when serving.

I do all my kugels in muffins, I like the way it looks in the plate and theres no cutting and mess. I do apple, lukshen, potato, carrot, zuchini, in these pans all d time. I spray pan real well before and was told by a friend that wtver she makes in muffin pans she adds a dash of baking powder so it rises a bit and gets a nice shape. hearty appetite!

I'm thinking of trying the hush puppy thing without eggs, using the filling of the potato knishes I make in that other thread. It should work, right? I can't do flour and I can't do eggs...

so I made potato kugel cupcakes and they came out way to oily I added 1 cup of oil for a 3 egg kugel about 7 potatos and they came out very low not high and not fluffy like I pictured them in my head.
