Friday night I am having a bunch of guests, most of whom do not eat fish. I would like to do some kind of nice salad that looks pretty when presented in individual servings. Any ideas?

One of our favorite appetizers is a half of grapefruit with a spoonful of jelly, jam or preserves placed in the middle

I often do Taco salad:
lettuce\bagged salad, tomatos, cucumbers, peppers, avocados, black beans, meat browned with taco seasoning (Don't have to do everything, pick whichever ones you like), the dressing is mayonnaise mixed with salsa (equal parts). I like mild salsa, I find it makes a more universally liked salad dressing, if that makes sense. I have a friend who adds ketchup to the dressing also, I think to cut the salsa taste a little too. I plate it, sprinkle with crushed taco chips, and put 1-3 chips kind of standing up on the side, depending how big they are.
If you need more ideas, ask, my husbad doesn't eat fish, so I do plated salad\creative first courses a lot.

You can do the endive salad from kosher by design. I make it all the time. I use whatever lettuce I have on hand to line the plates as opposed to endives.
