I steam veggies add eggs, mayo and spices fry on both sides

My mother makes a delicous potato one on pesach. Don't know exact quantities but its grated potatoes grated onions oil and salt. Mix together pour in frying pan and cook on both sides iit should get a crispy crust - it's kind of like a giant latke! If you would like I can try and get exact quantities.

My year round potato kugel qualifies! 5 medium/large potatoes, 1 medium onion, 2 eggs salt and pepper (if you dont use it on pesach you can skip it). Grate the potatoes and onion, mix in rest on ingredients and fry. (about 10 min on each side)

you can do a shredded root vegetable kugel stovetop. just convert the recipe the way you would a potato kugel. leave the oil out of the batter. use that to fry the kugel in. when one side in done, place plate over pan, flip kugel carefully, and complete on other side.

basically just use grated firm vegetables similar to potato like parsnip, kohlrabi, carrot, sweet potato, butternut squash, etc.

you can also convert a pesach vegetable cutlet recipe. just fry the whole batter into one large kugel cutlet, instead of into latkes.

anyone have a recipe for vegetable kugel on the stovetop? I had it at someone's house one time in seminary...I'm not sure what it had in it..maybe zucchini? it was really yummy!

Apple Kugel
4 apples
4 eggs, separated
4 tablespoons sugar
4 tablespoons potato starch
lemon juice
Peel and slice the apples. Sprinkle with lemon juice. Toss with potato starch and then stir in the yolks. Beat the egg whites into a snow, add sugar. Fold snow into apple mixture. Fry covered on a very low flame.

5 apples
1 cup pot starch
1 cup sugar
3 eggs
1/4 cup oil

Mix, fry, enjoy
