Does anyone have a recipe for a netted boneless dark meat chicken roast? I would like to serve it for the Shabbos day seuda, so it needs to taste good at room temperature. Any ideas would be welcome, especially something easy and delicious.

marinate overnight in a paste of lots of crushed garlic, olive oil, and salt.
saute onions. add roast and water to cover 3/4 of roast. bring to a boil. cook 20 minutes per lb.
cool completely. refrigerate until very cold. slice.

Mix 1 can cranberry sauce with 3 tablespoons onion soup mix. Spread on roast. Cook covered at 350 for 2½ hours. Cool. Slice, return to pan juices. Serve warm or at room temperature.
