I would like to make a scalloped potato dish for shavuos that calls for cheddar cheese. I dont think I can get it here, so Id like to know if anyone has any ideas for what I could use instead. The sauce has butter, flour, milk, salt, and pepper in it besides the cheddar. The recipe calls for sprinkling regular shredded cheese on top, should I just put some in the sauce instead of the cheddar?

You can use any shredded cheese available.

I have found that not all cheeses melt as smoothly as cheddar in a sauce. Sometimes the cheese clumps up. If it was just for sprinkling on top, that would have been OK. I know it's junky, but american cheese melts very smoothly.
