Freeze pesach cheese latkes

could I freeze pesach cheese latkes or they will be watery and soggy?

how about fridge?

how long after making will it keep good for in the fridge?

I think just the opposite, pesach latkes are more rubbery from the potato starch unless you eat gebrokts.

no I make it from potato starch.

but the cheese could be watery.

I would think it's risky freezing it, I'd me more inclined to freeze cheese blintzes

A few days is probably ok, I personally don't go for days old cheese latkes, it loses it's oomph. But you do you. Bhatzlocha

These don't turn gummy/stiff- they use minimal potato starch.
