In 2008 in one of the magazines there was a Pesach recipe for these vegetable kugel muffins.
I used to make these for Pesach and have lost the recipe.
My kids would eat them as soon as they cooled off, they are sooo tasty and
relatively nutritious.
Grated potato, carrot and zucchini?

Do you mean mini carrot muffins from pomegranate that was in family first? or the 2 tone muffins from 2011?
