I just posted to my blog several recipes I made for yomtov: Doughless Potato Knish Latkes, Coffee Nut Ice cream, and a few others. Using MINIMIALIST ingredients.

This may blow your mind but those "doughless knishes" are a major staple of my very Poylisher's family Pesach diet - we call them 'Bibalabulkalach'.

I always thought potatoes don't freeze well...how long do you freeze it for?
if it freezes well I'd love to prepare before yt" and fry on yt"!

Freezing makes it easier for the shape to hold & to fry. Potatoes dont freeze well normally but since you still fry it later it doent taste powdery. of course you can fry it right away; this simplifies the process if you want to serve it fresh on YT so you dont have to spend so much time over your pots.
