do you do simanim? this year we are doing a selection of latkes with silan dipping sauce (dates) for most of our simanim, so we are doing black eyed peas latkes, pumpkin latkes, beet latkes and leek latkes. We use simanim for the appetizer

This is my most asked for recipe, I'm not so great with measurements so some things are approximate

4 pieces of salmon
1 onion
3 eggs
3 stalks celery
1 red pepper (chopped very fine)
3 eggs
About 3/4 c mayo
Breadcrumbs
Salt

2 sheets of puff pastry
Egg for glaze

Put 1st four ingredients in food processor
Add the rest of the ingredients
As to the breadcrumbs add until the consistency is mushy, but not firm like you would for meatballs

Fill the puff pastry sheets
Close them and flip them so the seam is down
Glaze with egg
Bake at 350 until golden brown


Serve with dill sauce (mayo+lemon juice +garlic powder+ dill)

Ladies , I need to see your menus and get some ideas!
I made up a menu for myself, but I need to fill it out with first courses and desserts


Eating out first meal and Shabbos lunch.

1st day:
challa and honey

grilled chicken salad

meat - pot roast not sure yet what recipe
orzo
stir fry vegetables
apple kugel



2nd night:
challa and honey

potato knish w/ mushroom sauce

chicken pastrami roll up
broccoli - thanks for the ideas on the other thread!
rice w/ sauted peppers (and a great sauce I have to find the recipe for somewhere...)


2nd day:
challa and honey

sesame chicken
apple kugel
deli salad

Fri night:
challa and honey
gefilte fish

chicken w/ sauce- recipe I have to get from my mother in law
rice
honey garlic green beans


desserts so far are choc mousse, honey cake, choc chip cookies and cinnamon cake
(it's also for kiddush)

We have 8 people first night, 7 people second night and 5 people for every other meal on chag.

Here is mine:

Wednesday Night:
Simanim -- Beet latkes, Black Eyed pea latkes, Leek latkes, Pumpkin latkes, Silan, Apple, Pomegrante
Roasted Potatoes
Sweet Potatoes
Stuffed Turkey
Kurdish Roast Beef
Veggie Protein e.g. sausage rolls
Cauliflower
Apple/ Red currant cobbler- gingerbread topping

Thursday Lunch:
Apple/ Honey
Caesar Salad
Lasagne
Nutburgers

Thursday Night :
Simanim -- Beet latkes, Black Eyed pea latkes, Leek latkes, Pumpkin latkes, Silan, Apple, Pomegrante
Carrot Kugel
Oven Rice w. cashews
Stir Fry
Green Salad
veggie protein- nuggets??
New Fruit

Fri Lunch:
Cauliflower/ mac cheese
Quiche- mushrooms
Green salad
Corn

Fri Night:
Matza ball soup
Salad, egg salad, hummus
Left over meats
Veggie protein- sausage rolls?
Potato kugel

Shabbat lunch:
Leftovers

Additions:
Plain pasta for all of Chag for my kids

Desserts:
Honey cake
Apple cake
?Lime Cupcakes?
Blondies
Brownies/ chocolate cake
Chocolate pie

What are beet latkes?

I've cooked up 2 roasts and bought a corned beef. That's about as far as I've gotten.

One meal I'll probably do salmon.

I need to plan but I'm thinking of doing a more simple RH because I'm just tired.

First night we are going to be 8 adults, 1st day is 8 adults 7 kids. 2nd night is 9 adults, 2nd day is 8 adults 7 kids. Friday night is 4 adults, Shabbos day is still variable.

I sat down to make a menu, but got so sick just thinking about cooking all that food (I'm pregnant) that I gave up and ran to the toilet instead. So wish me luck.

have you ever tried date nut loaf bread? I was very impressed with this recipe -- its great with a little margerine or pareve cream cheese spread on it.. sweet from the dates but not loaded with sugar (you can even use less sugar than the recipe calls for (& leave out the walnuts if you dont eat nuts this time of year)

We are invited out for all of the dinners BH. My desserts are store bought.

Yom Tov night 1:
invited out

Yom Tov day 1:
Challah w/ matbucha, humus, techina, egg salad, & pickles.
Nashnushim salad
Chicken w/ dried apricots (recipe also calls for prunes, but I have no idea how to check those)
Garlic couscous
Teriyaki stringbeans
Dessert: chocolate chip cake, fruit, & tea (& possibly ice cream)

Yom Tov night 2:
invited out

Yom Tov day 2:
Challah w/ matbucha, humus, techina, egg salad, & pickles.
Coleslaw crunch salad
Ashpelov (chicken w/ rice, carrots, and craisins)
Vegetable stirfry
Dessert: honey cake, fruit, & tea (& possibly ice cream)

Shabbat dinner:
invited out

Shabbat lunch:
Challah w/ matbucha, humus, techina, kshuim (zucchini) dip, egg salad, & pickles
Israeli salad
Fried schnitzel fish w/ lemon dressing
Oven baked schnitzels
Rice w/ mushrooms or couscous if we have our anti-rice guest over Smile
Rosemary potatoes
Dessert: marble cake, fruit, & tea (& possibly ice cream)

pretty much bog-standard RH menu for us.

Evening (doing the same for 1st and 2nd nights)
* Simanim: apple & honey, apple compote with rosewater, pomegranate, fresh dates, leek (cooked in parve broth), beetroot (stems sauteed with chopped garlic, baked beetroot), butternut squash (baked and cubed, sprinkle with cinnamon), blackeyed peas (pretty much straight from a tin), fish head (seabream or snapper, stuffed with gef fish mix and baked. I may make a concession and get fish Haribo for the kids)
* Seven vegetables soup (butternut squash soup for vegetarians)
* Main: Braised lamb (first night), brisket (2nd night), apricot chicken
* Sides: leek patties, safran rice, sweetpotato kugel, green beans, green salad
* Desserts: apple cake, honey cake (store bought), chocolate mousse, fruit salad

Lunch (1st day only, invited out 2nd day. Something quick as there's not much time between Musaf and Tashlich. Milky as otherwise too heavy with all other meals are meaty)
* salatim and dips (hummous, guacamole, israeli salad, carrot salad)
* Courgette pie, butternut squash fillo rings, moroccan fishballs
* fruits, fruit strudel (store bought)

Shabbat lunch
* salatim and dips (hummous, guacamole, tomato dip, hilbe, roasted pepper, israeli salad, beetroot salad, mushroom salad, fried aubergine), jachnoon and hamin eggs (both set up as eruv tavshilin)
* meatballs, roast chicken, but I'm seriously considering cholent or tebeet...
* yerushalmi kugel, rice with crunchy bottom and/or roasted potato, green salad
* sticky toffee pudding, fruits

Steak mango salad
1 12oz steak
3 cloves garlic, minced
1 tsp kosher salt
Black pepper
3 TBSP oil, divided
1 bag romaine lettuce
1 mango, diced
1 avocado, diced
4 scallions
¼ c oil
½ c sugar
1/3 c vinegar
Salt
1 tsp mustard

Combine spices and 2 TBSP oil in gallon bag. Add steak, marinate for 30 mins.
Heat remaining oil, cook steak for 5 min on each side. Cool and cut into bite sized
pieces.
Combine dressing ingredients using an immersion blender. Assemble salad and top with
steak. Pour on dressing right before serving.



Caramel crunch cookies
1 c margarine or butter
1 ½ c brown sugar
1 egg
1 tsp vanilla
2 TBSP milk or parve milk
1 tsp baking soda
½ tsp salt
2 ½ c flour
1 c caramel chips
1 c cornflake crumbs, slightly crushed

Preheat to 350, line or grease cookie sheet
In the bowl of an electric mixer, cream margarine and brown sugar until fluffy.
Add egg, vanilla, milk, baking soda, and salt one at a time, beating well after each
addition. Slowly add flour.
Stir in caramel chips and cornflakes until evenly distributed. Place heaping TBSPs on
cookie sheet. Bake about 10 mins.

I made the cookies but I forgot to put in the bread crumns, so theyre just chocolate chip cookies with caramel chips Smile

Just curious- we do leek patties for simanim.. is there a reason you do two kinds of leeks or just personal preference?
