Yes, but the veggies will be soft. If you want them crispy it won't work. If you don't care or like them soft, then it freezes perfectly.

I've done it for supper and it came out fine... vegies are soft as mentioned but anyway alot of ppl like it with soft vegies.
For yom tov Im sure it should be good - maybe make extra gravy to heat up and pour over also on yom tov.
