Homemade snack ideas

I make most of my meals from scratch. However, I still get my snack fix from processed snacks and I'd really like to move away from that. I need ideas for healthy yet still snack-y foods that I can make myself. Yes, we also snack on cut-up fruits and veggies, but those don't always scratch the itch IYKWIM. so please, healthy homemade "junk" ideas- go!

Google "homemade crackers" and you'll find loads of recipes. I don't think there's anything wrong with pretzels - wholewheat if you can get them - with a little peanut butter to dip in. You could make some applesauce or homemade jam (not the kind you put away - just the kind that keeps for a week in your fridge) and put a spoonful into some plain yogurt. You could even prep these ahead like the fruit-on-the-bottom yogurts and have them in your fridge in little plastic containers.

gluten free peanut butter bars..using almond meal
sliced and roasted apples with Cinnamon and drop of oil
I make a huge pot of hearty soup and have some when I want to feel full and satisfied but dont want a full meal
baked sweet potato chips

Recipe for those peanut bars? Those sound really good.

2 cups almond meal
1/2 cup peanut butter
1/4 cup maple syrup
2 eggs
pinch salt
teasp vanillla
chocolate chips

spread in pan in an even layer and flatten well.

bake 350 for about 15 min

I usually double or even tripple the recipe

This muffin recipe has made a HUGE difference for me. I don't like to feed my kids junk or cereal, and these can be made up to 4 days before, stored covered (I put them in a bowl and put a plate on top) and they stay fresh and delicious, and the kids LOVE them so there is NO WASTE!

My notes are in parentheses. I have figured out that there are about 2 cups plus 2 tablespoons of creamy stuff (bananas, honey, yogurt), so I sometimes substitute canned pumpkin or apple butter for the banana, yogurt, or honey, and it works out great! I have also substituted cocoa powder for some of the rolled oats and it worked out very well.

Banana Oatmeal Breakfast Muffins (source: http://fitandhealthywithdebbie......html)

Ingredients:
2.5 cups old fashioned oats (I used quick oats b/c I had them with no problems)

1 cup plain low fat greek yogurt (whole milk I think is tastier. If substituting thinner yogurt or kefir use less as it is more liquidy)

2 eggs

1/2 cup honey (or omit and add a third banana)

2 tsp baking powder

1 tsp baking soda

2 TBSP ground flax seed (I don't use this but I do add 2 large handfuls of raw almonds for extra protein and blend with the rolled oats)

1 tsp vanilla (or add another flavoring. My kids like extra vanilla)

2 VERY ripe bananas (if substituting know 1 banana = about 1/3 cup)

Nuts, raisins, or chocolate chips to taste (optional)

(optional: cinnamon, nutmeg, whatever you like!)


Instructions:
1. Preheat oven to 400 degrees. Spray tin with non-stick cooking spray or line 12 muffin tins with liners.

2. Place the oats (and baking soda and powder, and nuts, if using) in the food processor and pulse for about 10 seconds. Add remaining ingredients to the food processor.

3. Process until everything is mixed together and oats are smooth. If using whole additions (raisins, chocolate chips, etc.) stir in.

4. Divide batter among cupcake liners, and bake for 18-20 minutes, or until toothpick comes out clean.

Let them cool on a wire rack for just a few minutes and then dig in. They are actually really good when they are warm, but they stay fresh unrefrigerated but covered for days!

I forgot to say: this is a great way to use leftover yogurt or kefir. This way I don't get mad when the kids don't finish, and as it is baked I don't worry about germs. If the yogurt or kefir is sweetened I eliminate the honey.

How long do these last? Do they pack well? I looked and looked for such a recipe and am so happy to find it!

I buy organic kernals. Theyre cheap in Trader Joes and use non gmo oil or butter.

Lol. I just saw this is an old thread but the ideas are timeless LOL . Healthy eating is always a virtue.
