Chuck steak is tough, so it's not recommended to broil it. (I don't know what "middle" chuck steak is...I'm assuming it's the same as the chuck steak I buy.)

The best way to cook chuck is to braise it. That means to cook it for a LONG time, covered, in liquid, at a low temperature. Pot roast, essentially.

Basic recipe? Rub a few spices on it (nothing major, garlic and onion powder will work), put it in some water or wine so that it's partially (but not all the way) covered, and cook it low and long. It'll be soft and yummy...but it won't taste like steak Wink
