Moroccan Roasted Vegetables

Moroccan Roasted Vegetables

Cut up the following veggies and place in shallow oiled pan:
onion
zucchini
eggplant
sweet potato
pepper
large tomato
can chickpeas

Sprinkle with
3 cloves garlic
2 T olive oil
1T lemon juice
1 T cumin
1 1/2 tsp turmeric
1 1/2 tsp cinnamon
1 1/2 tsp paprika
1/4 tsp pepper, cayenne if possible
2 tsp salt

Roast at 400 deg for about 40 minutes. Add a small box of raisins to serve
