Super easy!
4 potatoes
1 tiny onion
2 eggs
1 tsp salt
Peel potatoes and shred with onion in food processor. Squeeze out liquid in towel. Add remaining ingredients mix and fry.

I was hoping people would post recipes so I could ask my questions.
When you say grate can I do it in a food processor?
How do you squeeze out liquid from potatoes?
Do you also grate the onions?
How many should I make for 2 people?

3 potatoes
3 eggs
1/2 cup flour
salt & pepper to taste
grate potatoes. drain. mix with other ingredients. fry in lots of oil until golden!
yields: 20-25 latkes (I fried 4 at a time in 10" frying pan)
