Any kid friendly ideas that I can do with red potatoes?

1 lb potatoes peeled and cut into wedges
1 sm onion diced
3 T. Honey
2 T. Oil
squirt of mustard
1/2 tsp salt
Place wedges in single layer in a bekelah. Pour dressing over potatoes. Bake at 375 for 45 min stirring once half way through

1. Potato Wedges
Preheat oven to 400. Scrub potatoes well (no need to peel). Cut into wedges and place peel down on cookie sheet (I line it with parchment paper). Spray with PAM and sprinkle with spices to taste (salt, pepper, onion powder, garlic powder, paprika). Bake until outside is crispy and inside is soft.
2. Munchy-Crunchy Potatoes
Preheat oven to 400. Scrub potatoes well (no need to peel). Cut into bite size pieces. Toss with olive oil and spices to taste. Bake on cookie sheet or in pan, tossing occasionally, until edges begin to brown.
More sophisticated variation: Chop shallots into bite size pieces and add to potatoes along with a few squirts of mustard.

What's a bekelah?
I've heard of bekesha (black coat) and belkelah (challah rolls?), but not bekelah.
