I try to bake a batch of cookies every week for Shabobs and freeze most of them so I can send a mixed platter of cookies to simchas. Most peanut butter cookies are shehakol (and others have all kinds of other ingredients in them, and I didn't want to mix in chocolate chips or jelly or anything else - I have other cookies on the platter, remember) and I didn't want to run the risk of someone doing mezonos and al hamichya by mistake. So, I googled peanut butter cookie with flour and this is what came up . . and it was delicious!!!!!

Peanut Butter Cookies

1/2 cup margarine (one stick), softened
1/2 cup sugar
1/2 cup brown sugar
1/2 cup peanut butter, any kind (if you use the crunchy kind, you will have gorgeous little nuts in your cookies!)
1 egg
3/4 tsp baking soda
1/2 tsp baking powder
1 1/4 cup flour
1/4 tsp salt

Cream your sugars with the margarine and peanut butter. Beat in egg and then stir in the remaining ingredients. Shape into small balls and then flatten with fork to make ridges on top of each cookie.

Bake at 350 for approx 12 minutes; less time for chewy cookies.

Makes about 2 dozen medium sized cookies.

This is by far the best peanut butter cookie recipe I've ever tried.

This recipe also works well with a blob of applesauce instead of an egg. Just for the record, because not many cookie recipes work well vegan--but this definitely does.

I just made these cookies for after the fast. I substituted 1/2C oil for the 1/2C margarine and they came out amazing.

I really want to try these. What kind of peanut butter did you use? I have the kind made out of only peanuts and salt. Did yours have sugar and palm oil added? If so, which brand? Thanks!

These sound awesome. Thanks for posting. I'm making them right now for Shavuous. I had wanted to make the KBD Kids in the Kitchen PB cookies but my cookbook is missing! Knowing my kids, it's been lent out and gone for months......
