Suggestion for cold Shabbat kiddush/lunch

I'm planning to host a communal lunch for about 80-100 people.

Conditions are:
- no heat. No oven, hot plate/plata, crockpot.
- I already have lots of salad and dips for the first course. Desserts are also sorted.
- No cold cuts.


What can I serve for main course and sides?
It can be fish/parve.

cold salmon
sushi? (not sure how well this lasts overnight though)
fried gefilta fish patties
fried fish goujons with dipping sauces

kugels that are good cold. theres a creamy broccolli kugel in the spice and spirit that is good cold.

Fried fish balls
fish goujons
salmon in a sauce
potato salad
smoked salmon
herring
stuffed eggs
mini gefilta fish balls
rice or cous cous salad

Its hard to think of cold sides that are not salads but there are tons of pasta, rice, couscous etc salads you can do.

if you want to do meat (not clear) there are many more options.

Many dishes that are usually eaten hot taste very yummy cold.

At least for my taste eggplant rolatini (meat or parve) room temperature crispy stringbeans, rice as long as it's not too dry, chicken fingers.


In the hot weather I make refreshing ceviche. It's fish cooked in lemon juice, no heat require. It's not raw. The fish fully cooks and turns white.

If you are open to dairy, a quiche could be really nice! You can make it simply cheese, or spinach and cheese.

some ideas:

grilled chicken
sliced skirt steak or London broil
honey nut turkey cutlets
chilled salmon with dill sauce
poached salmon

rice salad
orzo
pasta salad
potato salad
quinoa salad

garlic green beans
zucchini "spaghetti" salad
bruschetta zucchini
ginger beet salad
sautéed garlic asparagus

Sorry to hijack, but would you please give me the recipe. What kind of fish do you use?
