I have some extra heavy whipping cream and would like to make some caramel to top a cheesecake. Does anyone have a tries and true recipe I can make WITHOUT a thermometer?

1 bar white chocolate
1t corn syrup
1/2t coffee
1Twater
melt over a low flame, pour over chilled cheesecake
