Urgent challah rising question

What is the longest challah can rise for the second rising?
Does challah really need to rise a second time?

It doubled in size in an hour. I shaped it. NOW Im stuck watching it rise when I really need to go somewhere.

How long can I let it rise the second time, shaped, glazed and covered...

Why not put it in the fridge to slow down the rising? Or even freeze it, then thaw, rise and bake?

You can leave it for an hour at least. Maybe an hr and half.
If you put it in the fridge it will rise slower.
Cover loosely with saran wrap so it doesnt dry out.

Okay.
So, IF I put it in my fridge now.
And take it out in two hours...
HOW LONG should it sit on my counter before I put it in my oven to bake???

Till it starts rising again. It takes time to get back to room temp and you don't want to put it cold into the oven. Exactly how long is impossible to say...long enough to rise some, not so long that the bubbles burst and the challah deflates. If it feels like one solid chunk, it's not risen enough. It should feel as if it has a fragile skin layered over the dough.
