hello ladies!
soon it will be shavuous........
usually I review a new cookbook and use some of the recipes for that chag in my column, but this year I decided to do something far more practical.
recipes from home cooks
and yes, I will be giving imamother.com a plug
( hey yael, you deserve it!!!)
so ladies, to plug imamother.com, im gonna need YOUR NORMAL usable, easy to do, yet yummy shavuous milchig recipes. if youd like your name of nn posted just lmk, and ill include it.

I am looking for a side dish for a fleishig daytime meal, but one that does not have any flakey dough in it (triggers my husband's migraine!). Then again, nobody in my family (except for me) will touch anything broccoli'ish, cauliflower'ish, mushroom'ish, squash'ish.....
What's left?

How about eggrolls. Buy wonton wrappers, saute coleslaw mix with 2 diced onions, add soy sauce, sugar and spices. Fill wrappers and fry.
Or mini apple (or plum, blueberry, strawberry/rubarb) pies, crisps. Mini Red Potoes, sesame noodles, carrot muffins.
I should know- I am one of those that won't eat anything that ends with ish

Heres a nice salmon recipe- good for a michig meal. good luck with your column
Salmon en Croute:
1 onion, chopped
1 pkg frozen chopped spinach
S & P
1 pkg flaky dough
2 1/2 fillets salmon
mayo
onion soup mix powder
saute onion in oil; add spinach and saute till cooked, season to taste, put aside.
roll out pastry dough into long wide loaf
on one side, lay out the spinach in a long strip down the center.
place salmon on top. spread layer of mayo and sprinkle with OSM.
roll dough up, make slits, egg sesame and bake at 350 for a bout 1/2 hr.
hope its clear!

this I only graduated recently. So there is hope for the future.

Baked Blintz Casserole
Batter:
2/3 cup oil
2 eggs
1 and 1/2 teaspoon baking powder
1/3 cup sugar
1 and 1/4 cup milk
2 cups flour
Blend all ingredients in a blender
Filling:
1 and 1/4 pound cottage cheese
4 ounces cream cheese
2 tablespoons unflavored yogurt
2 teaspoons vanilla extract
1/2 to 2/3 cup sugar
1 egg
Mix all ingredients together.
Preheat the oven to 350 degrees f. Pour half the batter into a lightly greased 9x13 pan or casserole dish. Pour all the filling on top, then the remainer of the batter.
Bake for about 45 minutes, or until the top is golden brown.
Serve with blueberry or cherry pie filling, strawberry preserves, chocolate syrup, cinammon and sugar... and tastes great hot or cold.

I personally double the batter recipe to give it a thicker, slightly more substantial crust to hold things together.

Cheesecake (can do it in the microwave if you want)
The ingredients are for Israel...in brackets for chu"l
1 double container "white cheese"/gveena levana (2 pkgs. softened cream cheese)
1 container sour cream (1 c. sour cream)
2 eggs
1 tsp. whatever flavouring you like (I use vanilla, because I'm boring)
1 tsp. cinnamon
1 c. sugar
crust (optional)
crushed "Petit Beurre"/tea biscuit cookies/cornflake crumbs...about 1/2 a package (1.5 c. graham cracker/cornflake crumbs)
2 tsp. margarine, melted
1 tsp. cinnamon
1 tsp. vanilla
Mix crust, and press into round baking dish.
Mix all ingredients well, and pour in. (You can also separate a 3rd of the mixture, add 1/4 c. cocoa, and swirl it, if you like chocolate.) Bake at 180 (350) for 45 minutes. Or, bake at medium-high (80% power) in a microwave for 30 minutes. (If you don't have a microwave with a turntable, turn the dish after 15 minutes.)
It's actually much easier than I made it sound...and very versatile. I've put pie fillings on the bottom instead of crust, and it doesn't matter what fat percentage any of the cheese or sour cream is, so it's a good low-fat recipe too (I usually use 0.5% white cheese and 9% sour cream).
