I worked on my fancy cheese cake the whole day yesterday. I closed the convection oven at 9:15 from being on 400 arnd 45 min. Now, it's meant to cool off slowly so I left it in and meant to take it out but the house was so quiet and I fell asleep! I just woke up ten min ago and remembered and ran to put the two 9' pans in the fridge... I'm so upset! R they spoiled?

Smell them. You'll know if they smell off. The oven can take many hours to cool down.

I always leave my cheesecake out the first evening. I do not like the taste of it refrigerated. According to the USDA rules cheesecake is considered a custard and must not be left out > 2 hours, but I have never had a problem (and I'm a person that will not drink milk if it's out more than 10 minutes!).
