I make this very simple recipe for white and for 70% ww, and it's great for both. The only difference as far as I can tell, is that you need to let the ww dough rise for longer than the white.
I let it rise for an hour before braiding, and another half hour after braiding.
(for white I do twice half an hour)
small bowl:
2 tablespoons dry yeast
1 table spoon sugar
1 cup warm water (not hot)
mixer bowl:
1/2 cup oil
1/2 cup sugar
1 tablespoon salt
2 cups warm water (lukewarm)
9 cups flour
add yeast mixture to mixer, mix on low for 10 minutes.
rise for an hour, then braid the challa and rise for another 30-40 minutes.
