When I log in to my Amex account, it gives me the following offer: Get a one-time $15 statement credit by using your enrolled Card to spend a total of $15 or more online at Amazon.com by 12/31/2014. Does anyone know how to redeem this offer? Does my card need to be registered/enrolled somewhere for it, or will I get the credit by simply shopping on Amazon?

You need to click apply or something like that on your amex offers and then just shop at Amazon and automatically applied
