I know, I know, I know, potato latkes should be fried and taste a whole lot better than baked,but I just want to limit the amount of greasy, fried foods that I eat. Family doesn't care either way as long as the latkes taste good. I'm actually thinking of making sweet potato-apple latkes.
My question: Does anyone have a
really good recipe for baked potato latkes? Other than the obvious shmearing of some oil on the bottom of the pan, are there any other helpful tips that I should be aware of?

You can use my kugel recipe...
I make potato kugel by using:
8 potatos (I grate them by hand: the medium size circle)
5 eggs
1/4 cup seltzer
1/4 oil
salt,pepper to taste
You can bake them in circles on a cookie sheet with baking paper and they will bake into latkes. I think that my potato kugel is a masterpiece, but others prefer onions and better grated potatoes.
