Has anyone tried this before?
Trying to lower the carbs.
DH misses potato kugel.
Maybe a different substitute for the potato?
Do you think it will work to make yapchik?
Always wanted to make it, but too many carbs.
Any recommendations welcomed.

Not sure what you want to hear. this is a recipe for cauliflower kugel. Unless your tastebuds are dead, it will still taste like cauliflower.

I've made cauliflower kugel, although to be honest, while I thought it tasted great it did not really taste like potato kugel. But I didn't use this recipe. Give it a try- even if it tastes different, it should still be good.

I love cauliflower. I mash it, I rice it, I make kugel from it. But I always wonder if those people who rave that it tastes just like potatoes are crazy, lol!
Of course, the recipe you posted does actually still have one potato in it, so maybe....

you can surely make a veggie kugel - similar to the 3 colour kugel ... but will it be potato - NO

What about using celery root instead?
Would it taste watery or yummy?
Would yapchik made with a faux potato kugel taste ok or yuck

Make a meat and root vegetable stew instead
Kugel made with cauliflower or celery root will taste like a great vegetable kugel, not like a potato kugel

I want a lower carb veg that will taste like potato if I use it in a potato kugel recipe.
Perhaps
Celery root, turnip,
Something that might taste like potato
When I make mashed cauliflower it tastes almost like mash potato
