Sautee onion. Add cubed potatoes and salt and cook on med-low flame. No water. Just oil. Stir every few min it shouldn't burn. I make it all year around too. Delicious!

2 Tbsp olive oil
1 Vidalia onion, diced
2 garlic cloves, crushed
2 zucchini, thinly sliced
salt & pepper, to taste

Heat oil in a large skillet over medium. Add onion and garlic and sauté 2 minutes. Add zucchini, salt and pepper and sauté for 8-10 minutes. Adjust seasoning to taste. (If you plan to freeze this, par-saute the zucchini for just 2-3 minutes.)

I didn't see anyone mention beef stew. I've never tried freezing it. But it's easy to make and can easily be adapted for pesach.

When I make beef stew I sauté onions, carrots, tomatoes and garlic for a few min. Then add cubed beef and brown. Add some good red wine. Then add beef broth or water with beef boillin cube. Add spices like pepper, parsley, oregano, thyme, and/or rosemary. Simmer low on stove 1.5 hrs maybe. I also add some potatotes at the end and simmer another 30 min or so.

Carrot soup is another easy pesach friendly recipe that freezes well. Boil lots of carrots with some potato & onion. Purée. And salt and pepper to taste. Freezes very well.
