"cheese" blintzes with tofu

Anyone have a recipe for blintzes filling that's like cheese but made with tofu? I had this somewhere and I'd like to make it for a dairy allergic guest

Can you buy the ready tofutti frozen blintzes? Otherwise you can experiment with converting a dairy recipe and use tofutti products.

She's also gluten free, and I don't really have time to experiment so I was hoping someone had a tried and true recipe. I made gluten free blintzes last year, but they were milchig. I can make the same leaves with pareve milk if I can find a filing recipe.

I've used water in blintzes to make parve btw. That works well!
I never used a tofu filling though but I'm sure there's a good recipe out there.
