My milk and soy allergic son, just passed food challenge for almond milk. I know it doesn't have too many calories or nutritional value? But I would love to use it in cooking to add variety to his diet. What do people use it for? He can have chicken, carrot, apple, rice, broccoli, green beans, meat, sweet potato, cooked tomato and not much else. I am sure I am forgetting some other safe foods.
I would love to see how people use it in cooking.

I use it in french toast casserole (can he eat bread or eggs?) and in shakes/ smoothies. You can use it with whatever veggies he is allowed to make a creamy soup.

I know that the almond milk I buy has more calcium than the milk I buy! We use it in place of milk for all our recipes, and my husband eats it with cereal, etc. (I don't know what your son can eat though). I use it for cooking, baking and regular drinking.
