My neighbor gave me a bunch of canned sliced carrots.
Any ideas what to do with them? I'm not particularly fond of eating them as is.

Make pureed carrot soup. Or carrot kugel. or add to vegetable soup near the end of the cooking period (include the liquid).

Make carrot muffins - a nice healthy treat, if made with less sugar and white whole wheat flour

Yes to carrot muffins. I also use them for my morrocan carrot salad. I just don't add any salt.

You can make a sauce using butter, basil and honey. My kids love it.
