Do I have to refrigerate muffins made with yogurt if I want to use them the next day?

No. Baking changes the nature of the yogurt and it is no longer perishable. I assume you mean that yogurt is mixed into the batter, not used in frosting.

I'm not so sure, I made carrot cake w Greek yogurt and it turned rancid after two days
