I have a great kreplach dough recipe, from the Dining In, but would like a different filling. Can anyone suggest something good?
Also, what can I make with leftover filling?

I always found the best kreplach filling was one that used leftovers. I'd save a few end pieces of roasts and a little chicken or turkey, then saute a large onion, add an egg and seasonings and grind it all together. DD swears by also adding a splash of sweet wine. You can use leftover filling (somehow there is always more filling than dough) to fill knishes, blintzes, bourekas, etc. (or just more kreplach).

I make it from the leftover chicken from my chicken soup. mashed and a grated onion. Kind of followed recipe from spice and spirit.
We eat it in the soup so I don't find the taste of the filling super important, but I think it is good this way.
(oops, I thought you were asking for a recipe using leftovers...)

Ground veal is yummy. You can combine some grated ginger, chopped scallions, splash of sherry, salt & pepper and an egg white. Cook in salted boiling water for 10-15 minutes.
