Can I use pomegranates or dates that have kedushat shvi'it to make a sorbet or ice cream? I'm trying to invent a recipe, but I remember hearing there's an issue with using shvi'it produce in a "weird" way.

Crushing fruits that aren't usually crushed is a problem. To me that describes pomegranates. I wouldn't experiment with kedushas shvi'is, but that's just me.
