I didn't use turkey pastrami. I'm not sure I've seen turkey pastrami so I used regular pastrami. the meat with cabbage is a classic like the soul food greens which uses either a ham or smoked turkey leg to flavor the greens.
SAVORY BRAISED RED CABBAGE
Source: Lukins, Sheila. Celebrate!
1 head red cabbage (about 3 pounds), tough outer leaves discarded
2 tablespoons olive oil
2 large red onions, slivered
¼-pound piece turkey pastrami, cut into ¼-inch pieces
4 beets, peeled and coarsely grated
½ cup (packed) dark brown sugar
¼ cup orange marmalade
½ cup dry red wine
½ cup red wine vinegar
Salt and freshly ground black pepper, to taste
1. Preheat the oven to 400°F.
2. Quarter the cabbage, remove the core, and finely shred the leaves.
3. Heat the olive oil in a flameproof casserole over low heat. Add the turkey pastrami and cook to release some of the smoke flavor, 2 minutes more. Add the onions and cook, stirring, until wilted, about 10 minutes. Add the shredded cabbage, the beets, and all the remaining ingredients and stir well. Cover the casserole, transfer it to the oven, and bake, stirring occasionally, for 2½ hours. Adjust the seasoning if necessary before serving.”
