My easiest, super healthy, and pretty much cheapest dinner is huevos rancheros:
In a small pot, mix a can of vegetarian baked beans (or black beans) with salsa in a 2:1 ratio. Add a splash of lemon or lime juice.
Serve on wraps, topped with scrambled egg, melted cheese, garnished with paprika and avocado slices.
Takes 10 minutes, looks fancier than simply eggs, quite filling and tasty (who can argue with Mexican?), healthy and economical! I'd make it every other night if DH would let!
