Thanks ra mom I love ur ideas!
I love broccoli soup, could flower soup,
Butternut squash soup is yum!
What I do is sauté a lot of onions and garlic and then add the other vegetable, salt and pepper, cook for an hour and blend.

I make this all the time guilt free.

1 onion -chopped into large chunks
1medium to large carrot peeled
2-3 zuchinni unpeeled
2-3 tbsp oil
chop up the veggies into big thick chunks...no need for nice slices or dicing
sautee a few minutes
Add 64 oz. of water to the pot
Cover Bring to a boil
Add salt to taste and Ground white pepper
Lower flame and Simmer about 4 minutes covered
Using a hand blender blend all the veggies and liquid while still in the pot...
The zuchinni soup comes out creamy and thick with no addition of any starch...I made this recipe up and get compliments on this soup all the time...everyone loves it and it's easy to make

From one of the magazines:

Aunt Fayge's Green Soup
• 2 tablespoons canola oil
• 2 large onions, diced
• 2 teaspoons crushed garlic or 2 frozen cubes
• 6 stalks celery, diced
• 4 medium zucchini (unpeeled), diced
• 32 oz. frozen broccoli
• 32 oz. frozen chopped spinach
• 2 teaspoon fresh dill or 4 frozen cubes
• 14 cups water
• 1 heaping tablespoon consommé
• 2 tablespoons salt
• 1 teaspoon black pepper

In a large stock pot, sauté onion until golden, about 5 to 7 minutes, stirring occasionally. Add garlic and sauté another minute. Add the remaining vegetables and cover with water. Add seasonings and bring to a boil over me high heat. Cover and simmer 45 minutes or until vegetables are tender. Turn off flame. Blend with an immersion blender.

Carrot Soup (make a cumin carrot soup or a ginger carrot soup)

I make this soup all the time, but without the carrots. Tastes delicious and makes it even lower carb. (But I simmer it for about an hour, not 4 mins, lol).
