Spinach tomato pizza or white sauce pizza (you'll have to blend the cottage cheese first to get similar texture to ricotta)

stuffed pasta shells
mix cottage, ricotta, mozzarella cheese, 1 egg, black pepper and salt as the filling
btw you can freeze cottage cheese but the texture becomes creamy like ricotta. so just use in baking or cooking. I use frozen cottage cheese for stuffed shells and skip the ricotta

Thanks! What size is the container of shamenet?

Thanks.
Do you use other cheese in lasagna or only the cottage cheese?

you can google for a recipe. I stopped following - but it's like 1 tub ricotta cheese, 1/2 c parmesan , 2c mozarella. too cheesy and $$ so I use cottage cheese and mozarella and just eyeball it. put in pan with tomato sauce and bake

Spinach Cheese Lasagna
1 (10 oz) pkg frozen spinach OR 2/3 of a 16 oz. pkg, defrosted and squeezed dry of liquid
1 (16 oz.) container cottage cheese
1 large egg
1/2 tsp oregano
black pepper
2 (8 oz.) bags shredded mozzarella, divided
1 (26 oz.) jar marinara sauce
9-12 lasagna noodles, uncooked
1 cup water

In a large mixing bowl combine spinach, cottage cheese. egg, oregano, pepper, and half of the mozzarella.
Grease a 9x13 pan. Ladle a thin layer of marinara sauce on the bottom of the pan. Lay down 3-4 noodles, half of the spinach/cheese mixture, and a layer of marinara sauce. Top with 3-4 noodles, the rest of the spinach/cheese mixture, and a layer of marinara sauce. Add 3-4 more noodles, a layer of marinara sauce, and top with the remaining mozzarella.
Pour water around the sides.
Cover and bake for 45 minutes in oven preheated to 350. Then uncover and bake 30-40 minutes longer. Cheese will be melted and bubbly.

You can use any vegetable instead of spinach. Can make your own tomato sauce. Can use just cottage cheese in the layering and just sprinkle a bit of shredded cheese on top.

Lokshen Cheese Kugel
1 package medium noodles (cooked and drained)
1 stick butter or margarine, melted
16 oz. cottage cheese
8 oz. sour cream
4 eggs
2/3 cup sugar
1 tablespoon vanilla sugar or 1 teaspoon vanilla extract
cinnamon, optional
cornflake crumbs, optional

Mix all ingredients well and pour into a greased 9x13 pan. Sprinkle with cornflake crumbs if desired. Bake at 350 degree for 1 hour.

OOTBubby has a recipe that uses milk and American cheese instead of sour cream, if you'd like me to link that recipe, let me know.

For lasagna. I take a 9 x 13. Line four pieces of lasagna. Pour sauce over it. Mix some cottage cheese w the sauce. Sprinkle some shredded muenster cheese. Repeat the layers The last layer I just do pasta sauce and shredded cheese. I then pour some boiling water along the inner side of pan. Cover pan and bake.

this is rather odd but I do cottage cheese "pizza" on wraps (or matzah. yes, I eat matzah during the year as well.). Just heat a wrap up in the oven and put sauce, dabble some cottage cheese on, and sliced red onions on it. I like it. It is weird though I know.

A container of shamenet (sour cream) is a bit less than a cup. Probably about 3/4 cup.
