Definitely can't get easier. I try to put in lots of veggies: mushrooms, carrots, baby corn, onions, peppers, etc.
Or do you want a recipe where the chicken is deep fried like General Cho or Sesame?

There are lots of chinese food options with chicken.
Basic: form strips with cutlets, dredge in cornstarch. Heat oil (peanut oil or otber high smoke point oil works best, don't use olive oil) in wok or pan. Press 4 cloves of garlic and about 1" of fresh ginger through a garlic press. Make a sauce -- 1/4 C white cooking wine or mirrin, 2 T cornstarch, 2-3 T sugar, 3T soy sauce, 3 T broth or water. Add 2/3 of garlic and ginger, mix well. Chop any veggies you like into small pieces or strips. We like broccoli, snow or snap peas, carrots (slice thin on the bias), peppers, mushrooms (especially shitake), and canned baby corn.
Put about 1/3 the garlic in the hot oil, stir fry, add chicken, stir fry until almost done. Remove from pan. Add veggies in order of cooking time needed, canned ones last. Stir fry until almost done. Make a well in the middle and add sauce. Stir fry until sauce is thickened and bubbly. Add chicken back in, stir fry for another minute, cover. Serve with rice.
