I have two canisters of rolled oats in a household where barely anyone likes oatmeal, and would love to use them up before Pesach. Does anyone have recipes using oats, such as oatmeal raisin cookies, oatmeal chocolate chip cookies, and dinner meals using oats as an ingredient? Low-sugar recipes a bonus. Tia!

Google Neiman Marcus cookies. For some reason I'm having trouble cutting and pasting. I was trying the food.com link. And for some reason it lists the ingredients in a strange order.
I don't use all margarine, I use half marg, half shortening.

I always use oatmeal as a filler when making meatballs and/or meatloaf. I have used it when making tuna or salmon patties as well.
Healthy and you can hardly know it's in the batter.

Here's a link. I made a batch not long ago. I wasn't trying to use up the chametz yet, just wanted some cookies.

While the link is mainly about how the story told about the cookies isn't true, it does include the recipe in both English and Metric measurements and I like the idea that Snopes.com is good for something besides debunking internet hoaxes.

vanishing oatmeal raisin [quaker box]
1 cup crisco
1 cup brown sugar
1/2 cup regular sugar
2 eggs
1 tsp vanilla
mix (I use a whipper for fluffiness)
add 1 1/2 cups flour
1 tsp baking soda
1 tsp cinnamon (I put 2)
1/2 tsp salt
mix
3 cups quaker oat meal
1 cup raisins
(my variation white choc chips & craisins & often add molasses)
bake at 350 for 12 minutes

1 1/2 cups sugar
1 cup crisco
4 eggs
2 tsp vanilla
mix then add
2 cups flour
1 cup cocoa
1/2 tsp baking soda
mix then add
1 cup oatmeal
1 1/2 cup white choc chips
1/2 cup real choc chunks
bake 350 for 10 min

Whole wheat oatmeal cookies

also google 3 ingredient oatmeal bars - very easy and somewhat healthy - just oatmeal, honey and peanut butter granola bars.
Granola Bars
2/3 cup oil
2/3 cup honey
1/3 cup brown sugar
1 tsp vanilla
1 cup whole wheat flour
1 tsp baking soda
41/2 cups oats
optional Add ins: choc chips, raisins, nuts, etc.
Mix together oil, honey, and brown sugar, add vanilla, mix, add other ingredients.
Press into a 9x13 pan and bake for 25 minutes at 350.
