I have a butternut squash I was planning to roast and suddenly realized I actually want to try something different than roasting this time. So maybe a kugel? Anyone have a delicious recipe?

Looking for something more similar to potato kugel savory, not sweet. NOT pumpkin-pie-sweet. MAYBE carrot-muffin-sweet but I'd still prefer more of an oniony concept.

And the objective is to be healthyish.

Thanks!

These fritters are excellent. Should be good as a kugel though you may want to add some flour and oil since not being fried.

Cook squash for 25 minutes then add onions and cook until done ( I find it needs much more time than it says).

How about making a squash puree (like mashed potatoes) and serving it with sautéed onions on top?

Took it out, tasted a piece - it's not bad. Maybe even pretty good, will have to wait and see how the family reacts. But not quite the type of thing I'd definitely make again. I'm sure it tastes better as fritters because the top got a little crispy and that tasted the best.
