I saw a challah recipe using white wheat flour (it was in Joy of Kosher magazine's Israel issue)- does anyone know what this is? I am assuming that it's not white whole wheat flour.

I'm not so sure. It might actually be white whole wheat flour. For some strange reason people say wheat when they mean ww, as if white flour isn't made out of wheat
At the very least, hope this reply serves to bump for you.
