I would like to roast some vegetables on Friday, and then serve them for Shabbat lunch. They would be sitting on a hot plate a few hours on Shabbat morning. Are there any particular vegetables that I should avoid?

Put them on the counter early in the morning so that they reach room temperature in time for lunch. Don't reheat as they'll end up soggy and mushy.

Sweet potatoes and mushrooms reheat fine. Green beans and asparagus and zuchinni can get too mushy
