Looking for a cold vegetable soup to serve on shabbos. It needs to be pareve, obviously, but it also needs to be tomato-free. Ideas?

Would you consider a fruit soup?

No, I have been making fruit soup of every kind imaginable every week and we are tired of it. Plus I don't have a working oven or stove (another story....) so we are having fruit for dessert too, and it seems like overkill.

Creamy zucchini soup tastes good cold. You can sprinkle garlic croutons or pine nuts or parmesan cheese over each bowl before serving to make it a bit more interesting.

Yes. A flavorful one like KBD.

You can leave it on the counter shabbos morning so it comes little closer to room temperature.

Thanks! | usually food from the freezer has extra moisture so its not so good if it wasnt reheated. maybe reheat it before shabbos and then leave it in fridge? food from fridge that usually are eaten warm are usually ok at room temperature.

I made this once ages ago and tbh I can't remember which recipe I used, but I got it off google. Also, to be even more honest, I didn't like how it the cucumber tasted in there. If I was going to try something like that again, I would go with just avocado.

Kosher Palate has a cold cucumber soup
Potato soup is traditionally served cold in France, under the name vichyssoise. Yum!

I've posted several recipes under 'Soup' forum. I'd say cold mint and lettuce soup would fit the bill, ditto for white gazpacho (almond based, non-tomato)
About vichycoise, I believe it is actually NOT an authentic one. (The authentic French one is potato/leek/cream soup served hot. It's American who served it cold).

Mango gazpacho, cold zuchinni walnut soup with lemon and dill, cold beet borscht, cold Coconut curry corn soup with lime and jalapeno.
No recipes sorry- I kind of make them up as I go, but look online for ideas

I would have imagined that this would be not so good, but I had a cold parve zucchini soup just last week and it was delicious. I don't have the recipe though.
