What's the minimum amount of sugar I can use for a 5lb of flour challah recipe without compromising the texture.
I know the yeast needs the sugar to rise for the challahs to come out fluffy.

Technically you don't need sugar at all as the 4 basic ingredients needed bread are flour, water, salt, and yeast.

For 5lb I'd use about 6-7 oz of sugar, but you could probably get away with half of that.

I add 8 flat tablespoons to 6 lbs. And it is enough sweet. And slways have beautiful rising dough.

The yeast doesn't need sugar to rise, but the sugar helps it rise faster. A lot of challahs soft/fluffy texture actually comes from the oil and eggs. If you let it rise long enough in a warm place, it should rise just as nicely with little or no added sugar.

it does take longer to rise and it may not rise at all. I have tried that and that was my experience.

I don't want it sweet, for us sweet challah is mezonot.

Will quick rise work better

8 tbsp is actually 1/2 cup.
