Recipe can be used with leftover rice, baked rice, or rice from steamer.
In a frying pan, you sauté a cut up onion and then add 2-3 beaten eggs, depending on how much rice you are using. Cook it until done, then add a handful of either frozen or canned peas and carrots, or other vegetable mixture that you like.
Add some soy sauce and add to your rice. Heat and serve.

I do this all the time. I prefer scallions to onions though, and sometimes I add a pinch of ginger.

to each his own. we're not big green onion fans.
I generally add ginger or 5-spice powder to the meaty component, so I wouldn't add it to the rice.

I'm not a big onion fan so I use this recipe - 1 c cold cooked rice sauteed in 1 T oil for 5 minutes. Make a well in the middle, add 1 beaten egg & stir it so it cooks. When nearly cooked, mix it into the rice so you get bits all over. Add salt, papper & soy sauce.

I make mine in the microwave, 22 minutes.
1 cup rice, 2 cups water (or 2.5 if it’s basmati)
1 tbs. oil
1 tbs. onion soup mix, optional (but worth it)
3 teaspoons soy sauce or teriyaki sauce
Salt and pepper and garlic
Put in a glass bowl or plastic container into the microwave for 22 minutes.
In the meantime, chop an onion (optional) and place on a pc of silver foil, and pinch it closed from all sides (or just wrap it into a ball or something. Place on the rack in the oven for about 5 minutes on 500. it should become soft, with brown on the edges. Add that in to the rice when it’s done.
Heavenly. I make this erev Shabbos when everyone is still hungry, and sometimes I chop in a frankfurter which cooks in the microwave at the same time as the rice.

Microwave energy is c ostly, Mah Pitom. You're better off cooking it with a gas stove or using a steamer.

Thanks again - it came out really good! I sauteed grated carrots with the onion. It was nice to get in some extra protein also.

How much rice do you put? I used a cup of raw rice - not sure how much it was cooked - and it was very good.
