Looking for something easy but delicious to make with phyllo dough for shabbos. It can be a dessert, but my preference would be for something savory. Not to be difficult but we don't use margarine, sugar (we use alternate sweeteners like honey in moderation), soup mix.....

spinach deli roll ups
sundried tomato + kalamata olive twists
they have a bunch of recipes on the pepperidge farm site, but a lot of them have dairy...

Thanks so much but I looked on the Pepperidge Farm site and they don't seem to have phyllo dough recipes, just puff pastry. I know from past experience that phyllo dough can be a little hard to work with. That's part of why I wanted help. Anyone?

You're right, phyllo dough can definitely be hard to work with. In my experience, the only way to get it to behave itself is to just accept that you need to use a lot of fat between the layers. I usually use butter, but if you're against that I'd think oil can work.
If you want something savory, you can make bourekas with phyllo dough instead of puff pastry--they're delicious! Here's a tutorial on how to assemble them:

That sounds great! Do we suppose they can be frozen? Seems like the kind of thing where I would want to make a huge batch. Also thinking Purim.....

Totally. I always make huge batches and then freeze. Freeze them "bare" and then just do the final egg wash / sprinkling with sesame seeds when you pull them out to use them. Bake directly from freezer (do not defrost first).

You can fold burekas like triangles.
To look like a hamantash.
Add egg wash in a triangle shape in the middle
Add the sesame
Then egg wash the outer edge.
