3 pounds if main dish.

Thanks! I have 2.75 lbs already cleaned and prepped so I'll use all that and serve leftovers at another meal.

That will be enough. I find when I make cutlets people don't eat more than 1/3 a lb. of course I have side dishes etc

I would estimate two but make 3 just in case because I prefer to have leftovers than shortage.
But that is if the chicken will be the only main protein.
If you're making meat as well then 1.5 lb should be plenty.
Since you say you already prepared more, I would just cook it all and freeze any extra to enjoy at a later time.

3 pounds, no less. For hearty eaters, I would make more, even if there is meat. People tend to eat more overall when there are multiple main courses.
