Potatoes (I once read about potatoes, despite its bad rap has plenty of vitamins and is the only food one can live and thrive on for years in a deserted island.) |
Yup. The Mark Watney* Diet!
(In honor of fictional astronaut Mark Watney from the book/film The Martian.)
Potatoes -- regular white potatoes -- have more potassium than a banana, plenty of vitamin C, and an adult's daily protein needs if you eat 10 potatoes a day. They are also a decent source of B vitamins, and minerals like magnesium and iodine.

This is so interesting. So why are we taught they are fattening?

It's part of the carbohydrates group. And there is a growing anti-carb uprising so potatoes are included in that...

A single potato (boiled or baked, with nothing else) has only about ~160 calories.
The problems arise when:
1) It's often the way potatoes are served, or what they are served with. French fries, mashed potatoes with butter or gravy, "loaded" baked potatoes with cheese and sour cream, potatoes in a stick-to-your-ribs beefy stew... that's not what we're talking about
2) White potatoes have a high glycemic index, meaning their carbohydrates are quickly broken down. So you won't feel as full for as long afterwards. (So the people who demonize white potatoes would probably also tell you that eating too much fruit is bad for you, which, good gracious I hate diet talk, that may be true for some people, but every body is different. But this has nothing to do with "calories" or "fattening", it's more about how your body metabolizes starches.)
3) Eating nothing but white potatoes would still leave you with some important deficiencies. Not enough vitamin A, E or K; not enough calcium; and (ironically) not enough fat!
