Princeton Canoe - not far from Toms River, can split up into 2 boats based on kids rowing ability, and Princeton Hillel sukkah is only 5 minutes away (parking there can be challenging though)

Philly - Franklin Institute, mint (free), Liberty Bell, zoo, Camden Aquarium - there are a few shuls with sukkahs near the tourist attractions and also in Cherry Hill

I would pick 1 big trip or 2 small trips in philly. For sure can go to philly in a day.

Philly zoo
Six flags
Cape May zoo
Lighthouse
Beach
Atlantic City recycling center
Nj planetarium and state house tour
Dukes farms (biking)
Apple picking
Peanut picking
Pottery painting

No, definitely don't try to do it all in one day. Look over the options and decide what your family would most enjoy, and choose 1 morning activity and 1 for the afternoon. I forgot to mention that Eastern State Penitentiary in Philly is also really unique and cool.

Often the indoor water parks in Mt. Laurel are rented out on chol hamoed with separate hours for men and women, so you could look into that, and Diggerland is right there as well and could be lots of fun for your kids.

We went last year chol hamoed. Maybe it’s dewolfs - but I’m not sure. Until we figure out how to pick good ones it took a while. My kids thought was cool.

They are a pain to clean, dry, roast so that was an activity itself. Problem is we went on Eruv Shabbos and didn’t you’ve ourselves enough time to prepare them.

Succos is late this year so you may want to double check they are still around.
