Anyone know how long to bake to ensure it stays moist? I never made a brisket this large.

The key to moist is low and slow. Cook it for many, many hours on 225.

I can't say how many hours, but if it is mostly covered in liquid and covered, and at a low temp, you can put it up overnight. It's done when it is fork tender. You can't really overdo it if there is sufficient liquid for it not to dry out.

Why not cut it in half and bake in separate pans? This way the center will cook evenly.

I do my 4-5 lb roasts at 375 for 3.5 - 4 hours. Comes out delicious. Brisket is a flatter cut (rather than a thick roast) so maybe try 3 -3.5 hours.

Don't forget that you'll be heating it up on YT, so even if it needs a bit more cooking time it'll continue to cook while you're heating it up.
